Oven baked marrow custard white

As promised on my Instagram account, here's a recipe for baked marrow custard white I prepared yesterday. Some may call it also a Pattypan squash, Franchi custard white, Zucchini custard white or Zucchini patisson. 

Oven baked marrow custard white

Marrow custard white is one of the very low-calorie vegetables! 100g of raw veggie carry just 18 calories, contains no fats or cholesterol! More about nutrition facts you can read if you click here.

Here is the recipe for 2 persons. If you are preparing for 4 people, just double the ingredients.

Ingredients for 2 persons:

- 2 marrow custard whites

- 200g minced meat (pork and beef)

- 1 medium size onion

- 2 cloves of garlic

- half of bun (it can be any kind of bread)

- 150ml of milk (I always use lactose free or coconut milk)

- 3 branches of parsley (you can add as much as you like)

- an egg

- mozzarella cheese

- spices; salt, chilli powder (I use it instead of pepper), home-made mix of spices* (salt, dehydrated vegetables: carrots, tomato, onions, garlic, parsley root, celery, paprika, lovage, turmeric, dill, lovage)

*If you don't have dried mix of spices, you can add a bit of fresh ones and chop them into small pieces. 


1. Cut the zucchini, hollow them out and make sure you leave around 1cm edge. Don't cut too much, they need to hold the filler while being in the oven. A bit of meat you hollowed out, cut to small pieces. Make sure to remove seeds (you can save them for next year to be planted!). Salt the marrow custard white. It will release some water, which you will absorb with a paper towel later, before filling them.


2. Cut half of bun into small pieces and soak them in milk.


3. Fry finely chopped onion in a pan with a little oil. Don't fry it too much! When onion is glazed, add a bit of marrow custard white meat and home-made mix of spices and fry few minutes, then leave to cool. * If you don't have the mix, finely chop just a bit of each fresh vegetables (for example 3 slices of carrot, finely chopped (brunoise), should do)


4. In a bigger bowl mix with hands minced meat, pinch of salt, pinch of chilli powder, 2 cloves of finely chopped garlic, parsley, a well-wrung bun that has been soaked in milk, 1 stirred egg and a chilled mixture of fried marrow custard white with veggies and spices. Mix well.


5. Soak the marrow custard whites, they are probably full of water because of salt. Then fill them with the mixture you prepared in step 4. Cut mozzarella to small pieces and add them on top.

6. And last step finally :) Put filled marrow custard white in preheated oven, set to 180°C and bake for 1 hour.

When done, garnish it with a parsley and serve. Bon appetit! :)
